Grilled fish tacos are a healthy and easy-to-make recipe that is perfect for the summer. Pacific (US) Halibut is a sustainable seafood choice that is listed on the Sea•thos Sustainable Seafood Guide. In addition, halibut contains beneficial omega-3s which boost metabolism and reduce inflammation.
4 Pacific (US) halibut fillets (5 oz each), skin removed
2 tablespoons extra-virgin olive oil
Coarse salt and ground peppers
3 scallions, thinly sliced
1 cup fresh cilantro
4 radishes, thinly sliced
2 cups shredded green cabbage
½ cup 2 percent Greek yogurt
1 lime, cut into wedges
12 corn tortillas
1. Drizzle fillets with olive oil and season both sides with salt and pepper.
Heat a grill pan over medium-high high grill fish 4 minutes preside. Flip once until the fish is cooked through.
2. Flake fish into large pieces, removing any bones.
3. Wrap tortillas in parchment-lined foil and heat in oven for 5 minutes.
4. Divide fish among tortillas and top with radishes, cabbage, cilantro, and scallions. Season with salt and serve with yogurt and lime wedges. Enjoy!
